Hi Jessica, here are some fun ones from Oregon's collection:

Body Physics: Motion to Metabolism - uses H5P, embedded media and simulations, etc
Technical Writing - this one started as a revise/remix; then four more authors from a different college added chapters to create the expanded edition
A Digital Workbook for Beginning ESOL - PCC's ESOL department has been making a lot of great books with media, H5P, etc, and this is one of them.
